Have you Tried Leeks?
Scalloped Onions Leeks and Shallots:
Ingredients:
3 lbs Onions, cut into 1/4 inch thick slices
2 lbs (about 6) Leeks, the white and green parts both, split lengthwise, washed well, and chopped (Leeks are very sandy, so be sure to rinse very well!)
1/2 lbs. of Shallots, cut into 1/4 inch thick slices
1/2 stick (1/4 cup) unsalted Butter
1/4 cup Heavy Cream
1 Cup Coarse Fresh Bread Crumbs
1 Cup Grated Sharp Cheddar
1/4 tsp. Paprika
In a heavy pot cook the onions, the leeks, and the shallots in the butter with salt and pepper to taste, covered, over moderate heat, stirring occasionally, for 10 minutes. Reduce the heat to moderately low, and cook the vegetables, stirring occasionally, for 10 to 20 minutes more, or until they are soft. Remove the lid and cook the mixture over moderate heat, stirring, for 3 to 5 minutes more, or until the excess liquid is evaporated. The onion mixture may be made 2 days in advance and kept covered and chilled.
Preheat the oven to 375 degrees. Transfer the onion mixture to a 2 quart shallow baking dish and stir in the cream. In a small bowl toss together the bread crumbs and the Cheddar, sprinkle mixture evenly onto the onion mixture, and dust it with the paprika. Bake the onion mixture in the middle of the oven for 20 to 30 minutes, or until the cheese is melted and the mixture is bubbly.

I've Developed a New Closing Technique
Although Zig Zigler and other boast the best sales and closing techniques. I have developed a no fail system for hearing aids. As soon as my box of hand grenades arrives from my ebay purchase we will begin training for the Iraq closing technique. At the end you ask them to sign the purchase agreement and then you will replace the pin in the grenade. I think it could approach 100% success rates. At least for first time purchasers.

Not on Amazon -- Nutsy
Mom requested wish lists from everyone. I don't have a wish list on Amazon, unlike my smarter sisters. I probably will have one on Amazon, someday... when I have lots of free time and extended, uncensored interent access.

See What You Missed!






We finally arrived at 4pm your time. What a day of flying. We are going to spend tomorrow exploring there are many free shows at the hotels, plus lots of sights to see. I have a meeting on Tuesday and then we get to fly home all day on Wednesday. Detroit City here we come. If I had know we had lost the direct flight I would have done this a number of different ways. Anyway, Gualter and Sarah take a look at what you missed!

Mollybake Oven
Molly has been on a baking spree for the past two days. First it was decadent caramel pecan double fudge brownies on Friday....
She is quite the little baker.
Also, she tried to make beef stew, but it turned out to be beef soup.
Admittedly, this is not the most flattering photo of the soup. I am not a professional food photographer. The soup was actually pretty good.
So anyway, this is my (Bill's) first blog on here. Hope I was good. Please, no mean comments. I am not a professional blogger either.
Not So Friendly Skies

Our Saturday went a little different. Bob, Luz and kids were at the house when I got in from service. Attached a picture of the kids, Tina in the poncho I made her and Jonathan in a Mizzou T-shirt.
We left for Memphis at three, knowing we had enough time to make our 7:15 flight to Las Vegas. We had some trouble finding the Terminal in the dark, remember assemblies in Memphis and the Airport hotel? We park, get to the desk, find out Northwest has changed it's schedule. We were changed to a 6:30 flight through Detroit. Seems like a natural route don't you think. I am directed to a cell phone island to talk to one of the airline gods. It will only cost $2200 to change our flight to Sunday. I say, sounds like we spend the night and go home. This will obviously be my last Northwest flight either by choice or your merger. Talk to the supervisor, we can do it for $100 a ticket. So here we sit in the Memphis Airport hotel until tomorrow, we now fly out at 8:30 am through Detroit and will get to Las Vegas around 1pm. So much for 2 days in Las Vegas. Plus, instead of getting back on Wed. at 12:30 we'll get home at 5:30 through Minneapolis. Sure have a nice select number king size bed tonight!
Gooey Butter Cake at Park Avenue Coffee
Josh and I went to check out Park Avenue Coffee's 60+ varieties of gooey butter cake. Really, they only offer about 10 varieties a day. I went with the Peanut-Peanut Butter (there is also a Peanut Butter flavor...not really sure what the difference is) and boy was it ever peanutty. It was good, but not the best I've ever had. I think the best I have had would be one Sarah made (in Florida?) with Grand Marnier, followed by the extra gooey one at 1111 Mississippi (a restaurant here in stl.) which is served with a cold glass of milk. Yummmy! That reminds me, I need a gooey butter cake recipe!
Besides eating gooey butter cake, we also visited Penzeys spice store in Maplewood. I got some vanilla beans from Madagascar that I'm really excited to use (not sure what I'm going to do with them just yet) as well as some Hungarian Paprika. Josh also bought several things, one of which was file, the flavoring traditionally found in gumbo. Guess I have that to look forward to!
We capped off our Saturday food shopping spree by visiting Jay International, conveniently located on Grand Avenue. We purchased some panko (Japanese breadcrumbs) which I highly recommend if you like to "oven fry" things. Much better than regular bread crumbs. I also found some leeks, shallots, and mint at low, low prices. We passed on the durian.

He's in the Jailhouse Now

So last night was pretty interesting. I was upstairs putting something in the oven when the phone rang. I answered it, and was asked if I would take a collect call from Paul. In the instant I took to think about it, I knew he was calling to ask Gualter to go and pick him up from wherever he was, and I also knew that I was sick of paying for whatever Paul wanted, so I said "No" and hung up.
He called right back and Maria answered. She accepted the call and took the phone down to Gualter, asking me on the way why I'd done that. I said I wasn't going to pay for any of Paul's collect calls, so I wouldn't accept them, and if she was going to accept them, she would need to pay for them. Gualter refused to speak to Paul or to go pick him up. (The story was that Paul had left a couple hours earlier with two bus tickets and $17.00 from Maria to get a haircut.) Maria comes back upstairs and is passive-agressively trying to argue/scold me, asking why I did that, and how I don't know how that hurts her because that's her son, and I don't know what she goes through because I don't have a son. I tell her she should be proud of the fine job she's done with Paul, and also that I never will get to have a son if I have to keep living in this crazy house. She keeps going about how I don't care about the family, and only want to change things, and she does so much for us, she takes out the garbage, how can we treat her like that? I point out that we pay the bills for her, which is a pretty good trade.
Half an hour later, he's at the door, pounding on the doorbell and kicking the door. Turns out he took the bus back after all. I yelled up to Maria not to open it, but of course, she does. He comes in the kitchen and he's furious about me not taking his call and at Gualter for not picking him up, and he's obviously drunk. He's slurring shouting in English and Portugese and throwing stuff around. I'm in the basement, trying to comfort Rufus, who is understandably disturbed by all the fracas. So Gualter, Maria and Paul are all upstairs shouting, and stuff's being thrown around, and I decide after a couple minutes that it's only getting more heated and so I call the police. Paul is threatening Gualter that he knows guys who will beat Gualter up, and he's going to mess with our car, and that Gualter will never be rid of him (true dat). Gualter tells Paul he's going to the courthouse tomorrow to revoke his surety so the police will come and round him up. I finally venture upstairs to tell Gualter I've called the police. On hearing that the police have been called, Paul says something not very original to me, to which I do not respond, and I go back downstairs.
The sideshow continues, and after about 20 minutes the police show up, and Paul's sitting on the couch. They ask what's going on, and Paul asks them if "they wanna go" and starts to get up. They tell him to relax, but he keeps trying to get up, and he winds up punching one or both of the cops. They have to call for backup because officers have been assaulted, so we soon have three police cars in front of the house. They have to wrestle him down and drag him to the cruiser, sans shoes, because his resisting and fighting have throughly ticked off the cops. He threatens to use karate on them. And he actually managed to do some kind of damage to the cruiser. Gualter and Maria each gave statements, and it looks like he will be charged for assaulting a peace officer.
Gualter and I are going today after work to revoke Gualter's surety. We don't know yet if we'll be on the hook for paying since Paul broke the surety. I'll post again on that tomorrow.

Yummy Side Dish: Black Beans With Lime from Leah
This actually comes from Everyday Food magazine (thanks for that subscription Sarah!). I like to make this with Mexican food instead of just opening a can of refried beans--it's a little more interesting!
Ingredients:
1 tbsp olive oil
2 scallions (green onions), white and green parts separated, thinly sliced
Coarse salt and ground pepper
2 cans (190z each) black beans
1 tsp Chili Powder
1 tbsp Fresh Lime Juice (or more)
Directions:
1. In a medium saucepan, heat oil over medium. Add white part of scallions, and season with salt and pepper. Cook for 3 minutes.
2. Add beans, chili powder, and 1/4 cup of water. Cook until warmed through, about 5 minutes. Remove from heat, and stir in lime juice; season with salt and pepper. Serve garnished with green part of scallions.

El Jobbo
I met with Chris this morning. He offered me the job, but is going to mail me the paperwork later. The specs are 52k/year, 18-20 days vacay/sick time, 6 paid holidays, 2 floating holidays, health care plan yet to be determined, retirement plan is 401k with 5% matching, bonus based on annual review. Money is in the budget for reimbursing travel expenses, conference attendance, professional development, etc.
Things I'm not sure about: Seems like the hours I will work every week will vary. He said he likes to work 8:30-6 everyday, but I'm not sure if that means I will work those hours too. Also I'm not sure if I'm working 40 hours a week or as much as he needs me. Start date is still unknown, probably late February (which is not what I would like). Says I could start earlier, but my health care and retirement might not be in place. Job site is also still to be determined, which is another reason why the start date is unknown. He was looking at sites today--looks like it is going to be in Clayton, because that is a good locale for "wining and dining" prospective clients.
Other: He is going to put me in contact with other researchers working in economic development in the region so I can pick their brains about materials, getting started, etc. He also wants me to learn GIS mapping???! My budget for materials is 40,000, which hopefully will be enough.
So, what do you think?

Northern Food Aventures
So I just got back from an adventure with my two work friends, Dianne and Danielle. First we went to the best bakery in town (it's jewish and called "Gunn's") where I picked up pizza bagels, a poppy seed roll, almond and cheese danishes, and my favorite, the rootin tootin, which is an almond dough rolled up around raisins and dried cranberries. I didn't buy any of the savory stuff, which include a variety of knishes, cabbage rolls, and the ubiquitous perogies.
If that wasn't enough, we then went to lunch at Pampanga, a Filipino buffet. There I had stuffed squid, a beef soup with vinegar, amazing barbequed pork skewers, fried fishes, pork belly and all kinds of other strange stuff. Not everything was delicious to my western palate, but it was all fresh and fascinating. And all-you-can-eat for $7.99 a person.
Too bad I didn't have my camera with me.

Help a Sister Hill out -- Nutsy
Yes, we did go out to eat last night. We also endured about 2 hours of nothing but water and looking at Bill! Geezzzz. They did give us a discount by the end of the night... so it wasn't the worst waitress experience we've ever had (and recently we have had many).
The worst was at a locally owned restaurant, pizza/Italian feel, just opened their second location. The decore included neon signs for "Margaritas" Fajitas" and the shape of a cactus (the location was formerly a Mexican restaurant). Our rude waitress was the icing on the cake when she coolly stated directly to us, "I hate old people."
Don't know why she said it -- I don't understand... but, wow. Best dining experience ever.
In other news, I am racking my brain trying to figure out why Ricky is still being allowed to stay on Project Runway! After intense deliberation, I have come to the conclusion that Ricky is allowed to stay because of: 1. Wendy Pepper, 2. Vincent. These former, horrific cast members from previous seasons were allowed to stay past their expiration dates. Why?? Because we need someone to hate – a villain – and this year it’s Ricky. I'll I have to say is BOO!

In other news, I am racking my brain trying to figure out why Ricky is still being allowed to stay on Project Runway! After intense deliberation, I have come to the conclusion that Ricky is allowed to stay because of: 1. Wendy Pepper, 2. Vincent. These former, horrific cast members from previous seasons were allowed to stay past their expiration dates. Why?? Because we need someone to hate – a villain – and this year it’s Ricky. I'll I have to say is BOO!

Good Evening, I'm impressed with the communication. I've been swamped at work with call-ins from Josh's postcards. Still waiting to sell something. I'm trying to work on a 3 page anniversary letter for next month. This is is Ken Dalhberg's 60th year in hearing aids. They are using it as a big event for the year. Just talked to Molly she and Bill are going out for dinner. I think one cool one and I are going out too, maybe butter burgers!

Ricotta Pie

I wanted to post a pic to rival the previous baking, and the illustration and recipe of this pie look good. I actually made a dessert called "baked ricotta" a couple years ago, which was great, and this looks sort of close. I think with that one, you added amaretto in addition to the vanilla. I think I might try this one without the pineapple, and without a crust, just baked in a dish, to try to get something approximate to the baked ricotta. Adding raisins would probably also work. I think I might try this one this weekend.
Ricotta Pie
This will make enough filling for 1 (one) 9-inch pie.
2 pounds ricotta cheese (drained)
1 cup heavy cream
6 large eggs
¾ cup sugar
1 tsp pure vanilla extract
1 15-oz can crushed pineapple (drained)
Ground cinnamon (dusted on top of pie)
one unbaked pie crust of your choosing
1 9 inch pie pan
For the filling, place the ricotta in one strainer and the pineapple in another for at least 1-1/2 hours. Discard the liquids. This will create a thicker pie filling and keep the crust crispier. Add the ricotta to a large mixing bowl, and beat it smooth with a rubber spatula. Beat in the heavy cream, sugar, and vanilla. Beat in the eggs, making sure the texture is smooth. Finally, stir in the pineapple.
Set a rack in the lower third of the oven and preheat to 425 degrees.
Place the pie plate on the oven rack, then pour the filling inside the pie crust. Pour right to the top of the pie plate leaving just a bit of room for the filling to puff up. Sprinkle the top of the pie with ground cinnamon. If you have some extra filling left over, you can pour it into a small baking dish or ramekins for a crustless version, and follow the same baking instructions.
Bake the pie at 425 for 15 minutes, then lower the heat to 350 degrees and bake another 35-40 minutes. The filling should be slightly puffed and golden and “set,” meaning it should not be jiggly when you gently move the pie plate. Remove from the oven and let cool on a rack. Serve at room temperature or chilled.

I showed Danielle here at work our blog--specifically Leah's pics from the weekend gorge-a-thon--which Molly and I missed. She was very impressed with the Hill-Cooley baking skills. However, as I viewed this pornographic imagery yet again, I found myself vowing to take my camera with me to every meal, wherever, whenever, and then post the pics to make you all suffer every time you log on!!!

Say Something! -- Nutsy
Ok, it is day 2 of the family blog, 3:00 p.m., and nobody has said squat since yesterday. Not a great way to start! So, I'll say something!
Today I had a meeting with the rest of the members of the Marketing Team and I came to realize that the rest of this month (for that matter next month too) things are going to be absolutely crazy busy -- in a good way!
We have several upcoming events: a Valentines Ball, PeaceKeepers Society Lunch (for those big donors), Partners in Peace (with a special guest speaker) and SA Month is right around the corner.
On the home front:
Mo is more and more like Sawyer every day. He has taken to stealing my socks... we are finding them all over the house. Sometimes he will give them to Sawyer! I think they have a conspiracy going, UH!
In food:
The Cheesy Gordita Crunch is back at good ole' Tack Hell (love you Sarah). This is heaven in your mouth. Add a little hot sauce .... uhhhhhwwwooooo (that means "tastes good")!!!!
Bill and I might have turkey burgers soon, yummo! This weekend we will make an attempt at homemade french onion soup.
That's really all I've got... boo!

I will probably post on this about 5 times a day... you all will be sick and tired of me! Wonderful! Instead of out of touch, our family will be waaaaaaaaayyyyyyyy too intouch.
I have a suggestion: We need to be able to keep straight who is posting what. Perhaps we should attach our name onto the title of the blog? I'll get'er started with this blog! I asked mom for blueberry coffee cake, and she decided to make cinnamon rolls and cherry coffee cake in addition.

Now, to assuage your jealousy, I offer the recipe for Black Bean Salsa from the ever popular KSVF 12 Cookbook:
Black Bean Salsa
Ingredients:
1 16 oz can of Black Beans
1 10oz package of Frozen Corn
1 Medium Tomato, Chopped
1/4 cup of Red Onion, Chopped
1/4 cup of Lime Juice
1 envelope dry Garlic and Herb Salad Dressing
1/2 tsp Minced Jalapeno
1/4 tsp Ground Cumin
(Cilantro)
Mix all. Cover and refrigerate for 15 minutes. Serve with chips or other dippers.

Potato Cassarole
We had potato casserole last night. We talked about how we wished Sarah and Molly could have been there and how we wondered what the poor people were eating.
(This one came from Mom's old Southern Illinois cookbook)
Ingredients:
2lbs Frozen Hash Browns
1/2 cup Melted Butter
1 Tsp Salt
1/4 Tsp Pepper
1/2 cup Copped Onion
1 Can Cream of Chicken Soup
1 Pint Sour Cream
2 Cups Grated Cheddar Cheese
Topping:
2 Cups Crushed Corn Flakes
1/4 Cup Melted Butter
Defrost hash browns and combine with 1/2 cup melted butter. Season with salt and pepper. Add onion, soup, sour cream, cheese. Blend and pour into buttered 3 qt. casserole dish. Mix crushed corn flakes with 1/4 cup of melted butter. Cover potatoes with corn flake mixture. Bake at 350 degrees for 45 minutes.
