We had potato casserole last night. We talked about how we wished Sarah and Molly could have been there and how we wondered what the poor people were eating.
(This one came from Mom's old Southern Illinois cookbook)
Ingredients:
2lbs Frozen Hash Browns
1/2 cup Melted Butter
1 Tsp Salt
1/4 Tsp Pepper
1/2 cup Copped Onion
1 Can Cream of Chicken Soup
1 Pint Sour Cream
2 Cups Grated Cheddar Cheese
Topping:
2 Cups Crushed Corn Flakes
1/4 Cup Melted Butter
Defrost hash browns and combine with 1/2 cup melted butter. Season with salt and pepper. Add onion, soup, sour cream, cheese. Blend and pour into buttered 3 qt. casserole dish. Mix crushed corn flakes with 1/4 cup of melted butter. Cover potatoes with corn flake mixture. Bake at 350 degrees for 45 minutes.

Josh grilled some great pork steaks. He used a dry rub recommended by Barbara Bush.
Leah and Josh have left for home. Taking gifts, food, and dog with them. We had a great visit. Leah and I remain sequence champs. The guys got their bums iced!

I am having trouble with a couple of things on the site:

p.s. afterthought: my problems could stem from computer restrictions at work... hmmm.
p.s.s. We need some spell check action for the comment box. not all of us are uber intellegegent... some of us can't funchion without modern advances in spelling science.... or something.... yeah.

ok, i'm gonna work now.
My problem with this caserole was always the onions being crunchy and way up front, and so I don't remember it as a favorite. I think if I tried to make it again, I'd saute the onion to somewhere between transparent and brown-around-the-edges. Actually, you could chop some bacon and brown it, then brown the onions in the grease, and then your man would be all about this caserole, too!
