This actually comes from Everyday Food magazine (thanks for that subscription Sarah!). I like to make this with Mexican food instead of just opening a can of refried beans--it's a little more interesting!
Ingredients:
1 tbsp olive oil
2 scallions (green onions), white and green parts separated, thinly sliced
Coarse salt and ground pepper
2 cans (190z each) black beans
1 tsp Chili Powder
1 tbsp Fresh Lime Juice (or more)
Directions:
1. In a medium saucepan, heat oil over medium. Add white part of scallions, and season with salt and pepper. Cook for 3 minutes.
2. Add beans, chili powder, and 1/4 cup of water. Cook until warmed through, about 5 minutes. Remove from heat, and stir in lime juice; season with salt and pepper. Serve garnished with green part of scallions.

you seem to be eating a lot of black beans...first the salsa, now this dish. There are other colors of beans, you know.
